Serve this salsa with chips, vegetables, rice, or grilled fish/chicken.
Ingredients
1 pound red, ripe tomatoes (about 4), diced
1 mango, peeled and diced
1 1/3 boiled black beans, drained (about 1 can)
1/2 cup green onions, sliced
1/3 cup cilantro or parsley, chopped
Juice of 2 limes
1 tsp oil
Directions
Toss all the ingredients together in a large mixing bowl.
Chill until ready to serve.
