Hearts of RomaineHearts of Romaine with Raspberry DressingServes: 4 | Serving Size: 2 cupsIngredients:

  • 1 small head romaine lettuce, quartered lengthwise
  • ?1 tablespoon seedless raspberry jam
  • 4 tablespoons red wine vinegar
  • 1 teaspoon olive oil
  • Black pepper to taste
  • Pinch of dried oregano
  • 1 cup chopped tomatoes
  • 1/4 cup chopped red onion

Directions:

  1. Rinse lettuce thoroughly under cold, running water. Pat it dry with paper towels and refrigerate until ready to serve.
  2. In a small mixing bowl, mix jam, vinegar, oil, and seasonings.
  3. Place romaine hearts on a chilled salad plate and spoon dressing over the top. Garnish with chopped tomatoes and red onions and serve.
